Roma Tomatoes

     One of the most stereo-typical aspects of being Italian-descent, is the tradition of growing of tomatoes, preserving the harvest as tomato puree and finally making the tomato sauce every Sunday.  I have continued my mothers traditional methods of preparing the most essential of all Italian Culinary Ingredients:  Jarred Tomato Puree.

     It all begins in the garden, where we grow our own variety of plum tomato, whose original seeds came from the very farm where my mother grew up.  (A type of Roma)  Altered and changed through the years, we continue to save the seeds from our best fruit to begin the process again the next season.    We process the fruit into Tomato Puree using the trusty old “Squeezo” , then jar them up. Throughout the year, we make our tomato sauce using our jarred puree.  Since we add nothing but a basil leaf and some kosher salt, the jars will not last for then a season before losing color.  However we have used jars of puree which were up to 2 yrs old in the past! 

     If we produce a surplus number of jars, which we almost always do, we will offer some of our freshly-jarred puree for sale at the market.  At the beginning of market season, we will also sell puree from the past season for sale. 

     BULK PLUM TOMATOES  When in season, we will sell cases of other varieties of plum tomatoes, whose seeds I manage to gather from relatives (Red Agates, San Marzano’s etc. ) and such. We also plant a standard variety of a “Beefsteak” tomato (my own seeds) and a type of cherry.  (again, my own seed variety)
